Bag o' Brine
The volume of this brine will fit nicely into a 1 gallon ziplock bag along with a 3 - 4 lb. chicken. You should have little or no extra brine depending on the size of your yardbird.

Amount Ingredient Name Description
1 pint Apple Juice
1 pint Water
1/2 cup Maple Syrup
1/4 cup Kosher Salt
1/4 cup Brown Sugar
1 teaspoon dried ginger Use fresh if available
1 teaspoon black pepper
2 teaspoons garlic powder

Steps
1. Mix all ingredients into the ziplock bag.

2. Place chicken in bag.

3. Rest in refrigerator overnight, or at least 2 hours.
