Fried Green Tomatoes


Amount Ingredient Name Description
2 green tomatoes
4 eggs, beaten
1 cup cornmeal
1/4 cup flour
1 teaspoon salt
1 dash black pepper

Steps
1. Cut the tops off and slice into 1/2-inch slices. The first slice will need to be cored. Place slices in ice water.

2. Mix all dry ingredients thoroughly.

3. Take tomatoes from the water. Drain on paper towels.

4. Dip slices in egg, then batter thoroughly on both sides. Place on a cornmeal-dusted plate. Sprinkle additional cornmeal on the top of the tomatoes, and press in lightly with fingers.

5. To prevent batter from coming off when frying: Place plate in the refrigerator for one to two hours.

6. Fry in 350 degree oil until golden brown on both sides.

7. To prevent burning: Keep a constant watch, and add small amounts of oil as needed during the frying process.

8. Place fried slices on a paper towel. Keep warm on a cookie sheet in a warm oven until time to serve.
